Why, occasionally, is there a strong vinegar-like smell to SimplyThick® EasyMix™?

The organic acids in SimplyThick® EasyMix™ occasionally present as an odor, likened to the smell of vinegar. This smell does not indicate the product is “off”, and the product maintains its functionality despite the smell’s presence. Additionally, the smell dissipates when it is diluted into the beverage to which it is added.
